Hot Cocoa Mix

Ingredients

10 2/3 cups powdered milk
1/2 cup granulated sugar
6 ozs. non-dairy creamer
1 lb. Nestle Quick powdered drink

Directions

Put powdered mil thru sifter.


Yum Yum Coffee Cake

Ingredients

1 cup sugar
1/2 cup butter (double for a melt in your mouth experience)
1 cup sour cream
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon baking powder
2 cups flour

Directions

Cream butter until soft. Add sugar and eggs. Beat well. Sift together flour, baking soda, baking powder, and salt. Add dry ingredients alternately with sour cream, beginning and ending with flour mixture. Add vanilla. Pour 1/2 of batter into greased and floured 10 " tublular pan. Cover with 1/2 topping mixture. Pour remaining batter over the nut mixture and top with rest of topping. Bake 325 degrees for 40 minutes

Topping Mixture

1/3 cup brown sugar
1 teaspoon cinnamon
1/4 cup sugar
1 cup finely chopped nuts


Butterscotch Oatmeal Zucchini Bread

Ingredients

2 cups flour
3/4 cup rolled oats
1/4 cup oat bran or wheat germ
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 eggs
1/2 cup sugar
1cup canola oil
1 1/2 tsp. vanilla
3 cups lightly packed shredded Zucchini or summer squash
1/4 to 1/2 cup butterscotch chips
1/4 cup nuts (optional)

Directions

Pour into 2 greased and floured 9x5 inch loaf pans and bake in preheated 350 oven for 60 minutes. This recipe was developed by 5th grader Nicole Pielage and her Mom. You should try her White Chocolate and Raspberry Bread.

 


Chicken Tostada Salad

Dressing

1/3 c chopped fresh cilantro
1/3 c olive oil
1/4 c red wine vinegar
2 t  Dijon mustard
1 t ground cumin
1/8 t pepper
1 clove of garlic

Salad

4  8 inch flour tortillas
2 c shredded cooked chicken
1/4 c chopped red onion
1 can black bean
1 can of whole kernel corn
1 small tomato or red pepper
4 cups shredded lettuce
4 oz shredded Monterey Jack cheese

In jar with lid, combine all dressing ingredients; shake well

Heat oven to 375 place tortillas on ungreased cookie sheet. Bake for 7 to 10
minutes until crisp

Meanwhile, in large bowl combine chicken, onion, beans, corn and tomato.  
Pour dressing over salad; toss to coat.  Place 1 tortilla on each dinner
plate.  Arrange shredded lettuce on tortillas. Top with chicken mixture;
sprinkle with cheese.
